I often end up getting books at BYU Bookstore just because of the convenience, even though it's more expensive than it'd be elsewhere. (Or at least that's what I've been assuming.)
For used, I usually go to Pioneer Book on Center Street, though I've noticed an Anderson Books & Collectibles on University Avenue (around 200 or 300 North on the east side of the street), and they apparently have a shelf with books for $1 each. One of these days I need to stop in and check it out...
What other bookstores are there around here?

For used books if you have the patience and the diligence to keep going back regularly, you can often find things at DI. Of course, mileage will vary depending on what you're looking for, and their organization is *terrible* (practically nonexistent).
Beyond that, the BYU Bookstore isn't really any more expensive than any other store in the book department, unless you have a Barnes & Noble card ($25 a year, gets you 10% off all purchases in the store). The Barnes & Noble is in Orem, and there's a Waldenbooks in the Provo Towne Centre mall (it may be a Borders Express now; I don't know). There are bus routes that go to both bookstore locations.
For textbooks you might want to try online purchasing, though you need to plan ahead if you want to do that; sometimes shipping can take longer than expected.

I used to be a very big fan of the BYU Bookstore, and even for some time after Amazon.com and its deep discounts appeared on the scene I opted to buy from the BYU Bookstore when I had the choice. But I'm not a fan of their recent innovations: blaring televisions throughout the store, easy chairs for deadbeats to sit in as they eat their cheetos and read my future purchases, a video gaming lounge upstairs, etc. Now I usually only buy books from them if I need something in a hurry or there's a big sale on. (And I've now learned to exercise some self-control at their progressive sales. I never would have thought I could have so much buyer's remorse from buying things 90% off.)

Worldwide Book Drive has a store on 12th west in Orem, and a kiosk at the University Mall. All their books are $2 or $3. www.worldwidebookdrive.com

eBay has some great deals if you can catch them right. I recently acquired 50 or so classics for $40 (everything from Alcott to Hawthorne to Harper Lee) and I got the first 17 volumes in near-mint condition of the 1909 edition of the Harvard Classics for less than $20. All figures include shipping.
Apart from that, BYU Bookstore during break (usually on 20% off days, progressive sales, and in the remaindered books area) and half.com or AbeBooks for textbooks and music books (usually cheaper than Amazon in my experience). Happy Shopping.
Note: Isn't LibraryThing perfect for not getting someone a duplicate? :)

To really hit the bookstores in Utah requires some travel. (I know, sensitive subject right now.)
Nobody could safely ignore Sam Weller's in SLC:

I recall a quaint bookstore along Main or Center in Logan.... (it's been a while)
And a fellow who is truly a gentleman and a scholar--I love dealing with him:

I've also gotten some great deals through

I know nobody's been active here for years (almost 10 years after the OP!), but my favorite bookstore really belongs here:
Benchmark Books.
3269 Main St #250, Salt Lake City, UT
http://www.benchmarkbooks.com/
They specialize in Mormon books, especially nonfiction and scholarly studies, with some related titles on Christianity and western history. It's not an impressive storefront, but their selection of used, rare, and out-of-print Mormon books is impressive. And they also seem quick to carry the latest Mormon Studies titles, from all the scattered publishers in that arena. And they occasionally host author events. It's just a great operation, and THE bookstore if you're into Mormon Studies.
